The bilona process is traditionally used to create Desi ghee, which is renowned for its potent aroma and health benefits. Required Ingredients and Equipment
- Wooden churner, or bilona
- A muslin cloth or sieve

- Let the milk cool down to a lukewarm temperature.
Step 1: Boiling the Milk
- Put fresh cow’s milk in a big pot and bring it to a roaring boil.
- Allow the milk to cool until it is lukewarm.
Step 2: Converting Milk to Curd
- Add one tablespoon of curd to the lukewarm milk as a starter.
- Mix it well and cover the pot. Allow it to sit overnight (8-10 hours).
- By morning, the milk will transform into thick curd.
Step 3: Churning the Curd to Make Butter
- Make use of a hand churner or a traditional wooden bilona.
- Turn it in a circle, first counterclockwise and then clockwise.
- Butter will separate from the buttermilk after constant churning.
- Save the buttermilk for later use and gather the butter.
Step 4: Heating the Butter to Make Ghee
- Put the gathered butter in a pan with a sturdy bottom.
- Put it over a low heat and let it melt and simmer.
- Milk solids will sink to the bottom when the moisture evaporates.
- The ghee will become fragrant and golden.
Step 5: Straining and Storing the Ghee
- Turn off the heat as soon as the ghee turns golden and transparent.
- To get rid of the milk solids, strain it over a fine sieve or muslin cloth.
- Pure Desi ghee should be kept in a sterile glass or stainless steel container.
